Slow Cooker Chicken Cacciatore

Ingredients

1 Tbsp Olive Oil
3 Dashes salt & pepper, each
3 Boneless, skinless, chicken breasts
3 cloves garlic, finely chopped
1/4 cup White Wine
2 cans Diced tomatoes (14.5oz)
2-3 TBSP Italian herbs, whatever you like.
3 oz grated hard Italian Cheese (Parmesan,Rromano, Asiago, etc.)
Directions
Heat skillet over medium-high heat. Add oil. Cook chicken until just browned on each side (about 4-6 mins). Transfer chicken to slow cooker/crock pot, leaving any oil and brown bits in the pan. Add garlic to pan and saute until fragrant, DO NOT BROWN, about 1 min. Add wine and bring to a simmer, stirring and scraping the pan to loosen any bits on the bottom of the pan, cook 1-2 minutes. Pour over chicken, add tomatoes and Italian herbs. Cook on low 8 hours or high 4-5. When finished pull chicken apart with forks into large chucks. Stir in cheese.
Serve over pasta, rice, or spaghetti squash.
