Mediterranean Egg Scramble

Introduction

I created this scramble while trying to use up some on hand ingredients. It turned out very flavorful and satisfying!

Served with one slice of toasted sunflower seed bread and 8oz orange juice.

Served with one slice of toasted sunflower seed bread and 8oz orange juice.

Ingredients

    1/4 cup onion, chopped
    1 slice cooked bacon, chopped
    1 T Sun Dried Tomato Bruschetta (Trader Joes)
    1 T President Mediterranean Herb Crumbled Feta
    1 egg
    Pepper
    2 slices fresh Avocado (optional)

Directions

Cook bacon until crisp, draining afterwards then crumbling, set aside.

In small non-stick skillet, lightly saute onion, then add the crumbled bacon and Tomato Bruschetta to the skillet just to warm through. Meanwhile, whisk 1 egg and 1/2 tsp water together with pepper (optional) Pour egg mixture over the pan ingredients and cook for approximate 1 minute on each side. As soon as you flip the egg scramble, add the crumbled Feta and cook until done.

Top scramble with 2 slices fresh avocado (optional)
