IntroductionGarlic and Ginger roasted veggies with pepper and thyme tossed with Quinoa, Garlic and Ginger roasted veggies with pepper and thyme tossed with Quinoa,
2 cups of frozen vegetable mix - Onions, Carrots, Red peppers, Green peppers, Asparagus, Green Beans, Yellow Squash and Zucchini
3/4 cup dried Quinoa
Olive oil 1 tbsp
3-4 fat garlic cloves chopped
1 tsp chopped fresh ginger
3-4 dashes pepper
1/2 tsp spicy mustard
cook veggies in 3/4 cup water in an open saucepan until tender crisp, about 5 min, do not overcook.
heat oil, add 3-4 dashes of black pepper, mustard, fresh ginger and garlic, saute 3-4 min until rawness is gone
add veggies, salt, thyme, saute 2-3 min on high
add cooked quinoa, stir. and serve
