Quinoa with Vegetables

Introduction

Garlic and Ginger roasted veggies with pepper and thyme tossed with Quinoa, Garlic and Ginger roasted veggies with pepper and thyme tossed with Quinoa,
Number of Servings: 3

Ingredients

    2 cups of frozen vegetable mix - Onions, Carrots, Red peppers, Green peppers, Asparagus, Green Beans, Yellow Squash and Zucchini

    3/4 cup dried Quinoa

    Olive oil 1 tbsp
    3-4 fat garlic cloves chopped
    1 tsp chopped fresh ginger
    3-4 dashes pepper
    1/2 tsp spicy mustard
    dried thyme
    salt

Directions

Cook the quinoa as per instructions on the box

cook veggies in 3/4 cup water in an open saucepan until tender crisp, about 5 min, do not overcook.

heat oil, add 3-4 dashes of black pepper, mustard, fresh ginger and garlic, saute 3-4 min until rawness is gone

add veggies, salt, thyme, saute 2-3 min on high

add cooked quinoa, stir. and serve
