Veggie Stew

Ingredients

    2-3 pounds potatoes (any kind), cut up into 1 pieces
    1-2 bags of frozen vegetables
    1 onion, chopped
    2 cans tomato sauce
    1 can diced tomatoes
    1 teaspoon pepper
    1-2 cloves garlic
    - 1 teaspoon oregano
    - 1 teaspoon crushed red pepper (opt.)
    Water

Directions

Put all ingredients into crockpot, fill with water to the top of the veggies. Best if prepared the night before. Cook in crockpot all day, typically 8-10 hours to make sure potatoes are soft.
