This is a recipe from a friend of mine. It won first place in our 1St annual soup cook-off. I haven't found anybody yet who doesn't love it! This is a recipe from a friend of mine. Ingredients

1 package Chicken breasts
2 really large cans Swanson chicken broth
1 large can stewed tomatoes
1 can tomato sauce (14 oz)
1 large can chilies
1 bunch cilantro
3 garlic cloves
Long green onions
Cumin (about 3 shakes)
Chili powder (about ½ teaspoon)
Monterey Jack cheese
Tortilla chips
Directions
Cook chicken dice and then set aside. Mix all ingredients except the chicken, cheese and chips. Bring to a boil, add the chicken and then let simmer for a few hours. Smush some tortilla chips in a bowl, add shredded cheese and then top with soup. Yum, yum.
I always double the recipe and freeze the leftovers so it is a quick and easy dinner later on in the week.
