Roasted Vegetables & Chicken

Ingredients

    1. 1.5 lb skinless boneless chicken breast, cubed
    2. 6 - 8 small red potatoes, cubed
    3. 1 small onion, cut into chunks
    4. 1 bag baby carrots
    5. 1 T. Rosemary
    6. 1/2 t. salt
    7. 1/2 t. pepper
    8. 2 T. Olive Oil

Directions

1. Preheat oven to 400 degrees.
2. Place all ingredients in bowl and toss to coat.
3. Bake in oven 20 - 40 minutes or until chicken is done and vegetables are tender.
