Roasted Veggies, Caramelized UR2

Introduction

Ingredients

    Russet Potato (Raw, Peeled) 2 potato
    Squash, winter, acorn, 1 squash
    Fennel bulb, fresh,1 bulb
    Onions, raw, 1.5 medium
    Celery, raw, 4 stalk (at least)
    Radish, Fresh, a handful
    Carrots, raw, .5 cup, chopped
    Beets, fresh, 1.5 cup
    Jalapeno Peppers, 1 pepper
    Brussels sprouts, fresh, 1.5 cup
    Broccoli, fresh, 1.5 cup, chopped
    Garlic, 12 cloves

    Thyme, fresh, 1.5 tsp
    Marjoram, fresh, 1 tbsp
    Fresh Oregano, .3 tbsp
    Parsley, .25 cup
    Olive Oil, 1 tbsp

Directions

Cur veggies into chunks. Denser veggies smaller (beets, squash). Mince herbs and throw over top. Drizzle part of the oil over dish now. Toss with your hands, this will get the herbs everywhere.
Roast, in cast iron if poss, at 450 degrees for 30 minutes.

Add brussels sprouts 15 minutes later.
Add broccoli 7 minutes after that.

Makes 8 - 1 cup servings


Go wild add bell peppers, mushrooms, anything and everything on hand!!
