Corn Bread

Introduction

Serve this moist and delicious corn bread with Chili. Serve this moist and delicious corn bread with Chili.
Number of Servings: 12

Ingredients

    1 cup all purpose flour
    1/2 tsp baking soda
    1 1/2 tsp baking powder
    1 tbsp sugar
    1 tsp salt
    3/4 cup yellow cornmeal
    1 1/2 cups buttermilk
    2 eggs
    3 tbsp vegetable oil
    1/2 cup red peppers, finely diced
    1/4 cup red onion, finely diced
    1 jalepeno, finely diced
    1 tsp canola vegetable oil

Directions

Pre-heat oven to 425 degrees F.
Mix dry ingredients. Stir in veggies. Mix wet ingredients. Stir Wet and dry ingredients together with a few swift strokes. Heat cast iron pan in oven with 1 tsp oil. Pour batter into heated pan. Return to oven and bake 25 to 30 minutes.
Makes 12 servings.
