Confetti Quinoa

Ingredients

    2 tbl olive oil
    1 onion, chopped
    2 stalks celery, diced
    3 carrots, diced
    4 cloves garlic, minced
    1 cup quinoa
    2 cups veggie stock
    2 bay leaves
    lemon zest from 1 lemon
    juice from 1 lemon
    1 cup peas

Directions

Heat oil in a medium saucepan, Saute onion, celery, carrots,and garlic until softened.Add remaining ingredients except peas. Raise heat to high, once boiling, reduce heat and cover for 10 minutes. Add peas and continue to cook for 10 more minutes. Remove from heat, remove bay leaves, and fluff with fork.
