Lori's Low Carb Cream Cheese Omelet

makes breakfast on a low carb diet delicious! makes breakfast on a low carb diet delicious!
Number of Servings: 1

Ingredients

    1 teaspoon olive oil [to coat the pan]
    2 eggs, beaten in cup
    1 tablespoon flax seed, ground
    1 oz cream cheese

Directions

heat pan. beat 2 raw eggs in cup. prepare 1 oz cream cheese. grind 1 tablespoon flax seeds. Add eggs to pan (omelet style). Sprinkle flax seed all over eggs. Add cream cheese by breaking into small chunks and distributing over the omelet. Let cook a couple minutes. Gently turn whole thing over with a spatula and cook another minute or so until done. Eat and enjoy :)

    no I haven't because I am doing my first week of low carb Atkins induction style but I suppose that later on I could add in spinach or some chopped green pepper or scallions, they would bump up the flavor. :)
