Buffalo Chicken Salad

Introduction

A great, high-protein, low fat salad that is spicy, flavorful, and is super easy! A great, high-protein, low fat salad that is spicy, flavorful, and is super easy!
Number of Servings: 1

Ingredients

    1 boneless, skinless chicken breast half, grilled
    1 Tbs. hot sauce
    2 cups chopped romaine lettuce
    1/4 c. tomato, diced
    1 scallion, chopped
    6-8 banana pepper rings
    1 oz. feta cheese

Directions

Combine lettuce, and other veggies. (You can use whatever veggies you want. Just make sure to adjust nutritional values.) Chop chicken into 1 inch cubes. Cover chicken with hot sauce to coat. Top veggies with chicken. Top with crumbled feta or bleu cheese.

This works best if you use chicken that you grilled the night before. It's a great salad to pack for lunch. You can also add bleu cheese or ranch dressing, if you wish, but the hot sauce provides a lot of flavor, so other dressing is not necessary!
