CucumberTomato Dill Salad

Introduction

Number of Servings: 2

Ingredients

    Cucumber (with peel), 1 cucumber (8-1/4") (remove)
    Red Ripe Tomatoes, 1 cup cherry tomatoes (remove)
    Green Peppers (bell peppers), 0.5 cup, chopped (remove)
    Scallions, raw, 2 large (remove)
    Dill weed, dried, 1 tbsp (remove)
    *Trader Joes, Plain non fat yogurt, 3 oz (remove)
    *Lemon Juice, 1 lemon yields (remove)

Directions

Cube cucumber. Half tomatoes. Chop green peppers. Slice green onion and combine all in mixing bowl.
Mix 1/4 non fat yogurt with juice of 1 lemon, salt, pepper and dill weed. You can add a little artificial sweetener if desired.
Stir dressing into vegetables.
