Carol's Cornbread

Introduction

Sweet and tender right out of the oven, for the occasional treat! Sweet and tender right out of the oven, for the occasional treat!
Number of Servings: 9

Ingredients

    1 cup white flour
    3 t. baking powder
    1/2 t. salt
    1/2 cup sugar
    1/2 cup yellow cornmeal
    1 large egg, well-beaten
    1 cup milk (I use skim)
    1 t. melted shortening

Directions

Preheat oven to 400 F.

In large bowl, mix and sift flour, baking powder, salt and sugar. Mix in cornmeal.
In separate bowl, add milk to beaten egg and stir into dry mixture. Add melted shortening and blend.

Pour mixture into 8x8 or 9x9 greased pan.
Bake for 18-23 minutes in 400 F oven.
Cut into 9 squares and serve hot.
