Introduction

A great recipe that uses up the leftover produce in your fridge. A great recipe that uses up the leftover produce in your fridge.
Number of Servings: 6

Ingredients

    2 summer squash
    2 zucchini
    1 sweet red pepper
    1 onion
    1 tbsp olive oil
    salt & pepper to taste

Directions

Thinly slice 1/2 onion - saute' in olive oil until soft.
Slice equal amounts of squash, zucchini and red pepper.
Add to onion and continue to saute' until squash is cooked al dente.
Sprinkle with salt and pepper to taste
