Slow cooker lentil Soup Slow cooker lentil SoupNumber of Servings: 6
Ingredients

1/2 lb bulk Sausage browned, can use turkey, veggie, or pork
6 cups Chicken Broth or veggie broth (Can also use 2 cups water plus 4 cups broth
1 cup chopped Carrots
2 stalks Celery, chopped
1 medium Onion chopped
1 cup dry Lentils rinsed and drained
1/2 of a bell pepper chopped
1.5 tsp Salt
.25 tsp Pepper
2 cloves Garlic, minced
.5 tsp Rosemary
.5 tsp Sage, ground
.5 tsp Chili powder
.125 tsp red or cayenne pepper (1/8th tsp)
Directions
Brown sausage and add to slow cooker. Add all other ingredients and stir. Cook in slow cooker on low 6-8 hours until veggies and lentils are desired tenderness.
To reduce sodium use 4 cups low sodium broth and 2 cup water option, omit salt, and/or use a salt free/low salt bulk sausage.
