Rumbamel's version of MSU_ALLYN's Apple Pancakes

Introduction

I added some nutmeg and cinnamon to my apples that I cooked in the microwave. I also left the skins on for the vitamins. I used skim milk since we don't drink soy milk, I guess that's why my calories are a bit higher. I also decided to cook mine in ramekins so each family member could have their own special treat. Number of Servings: 4

Ingredients

    -3 apples or 4 C chopped fresh apples
    -1 t ground cinnamon
    -1/8 t ground nutmeg

    -1/2 C skim milk (fat free)
    -5 egg whites or 1 1/4 C liquid egg substitute, I used Aldi's Fit and Active
    -1/2 C quick cooking oats

Directions

--Core and chop your apples into small bite sized pieces. Put into a microwave safe bowl and cover. Cook on high and cook for 2 minutes. Add your cinnamon and nutmeg and then stir. Cook another 2 minutes and stir again covered. Set aside.

--Meanwhile, put your oats in a blender and blend until a fine powder. I forgot this the first time. Then add your egg whites and milk and blend again.

--Separate your apples into 4 ramekins and then add 1/2 C of the oat and milk mixture to each ramekin. Cook at 350 degrees for about 25 minutes or until a knife in the center comes out clean.

--Makes 4 servings of 1 ramekin each.
