Blueberry Tofu Pancakes

Introduction

I decided this morning that I wanted to make something with high protein, but I didn't want another omelet, so I searched for a tofu pancake recipe! SP doesn't have any up, so I thought I would copy this great recipe from Earth Vegan - Holy Cow Recipes:

I added about a cup of blueberries to the batch I made, super yummy!

    Blueberries (frozen) 2.25 cup
    Whole Wheat flour 1 cup
    Granulated Sugar 2 tbsp
    Baking soda 1/2 tsp
    Salt 1/4 tsp
    Soy milk 1/3 cup
    Lemon Juice 4 tbsp
    Vanilla Extract 2 tsp
    Tofu, 1 cup
