Ingredients

1 pound lean ground turkey breast
1 box (6 oz.) stove top stuffing mix (cornbread)
1 cup tap water, 1 large whole egg
3/4 cup mild salsa ( substitute w/ b.q.sauce or pasta sauce).
1/4 cup mild cheddar cheese
seasonings of your choice: 1 tsp. Italian seasoning, 2 tsp. chili powder, 1 tsp. oregano, and 1 tsp.garlic powder:
I just use one of these seasonings, depending on what I have in the house. If I am using salsa, I use the chili powder for a mexican flavor,with,b.q. sauce I use the garlic powder, and if, using spag.sauce, I use the italian seasoning.
Directions
Heat oven to 375 degrees. .
Mix meat, stuffing mix, water, egg, and seasonings of choice until well blended. Add in 3/4 cup salsa or other sauce, blend well. .Press into 12 muffin cups that have been sprayed with cooking spray.
Make indentation in center of each with back of spoon; evenly, for later when adding a dab of sauce and cheese when meatloaves are done baking .
Bake 30 minutes or until meatloaves are done (160 degrees F ). Remove from oven. Top evenly sprinkling 1/4 cup cheese and tbsp. sauce on all 12 loaves. Cheese will melt into each one. Let stand for 10 minutes..
