Lizzy Antipasto

Introduction

This is a high-calorie, high-fat, high-sat. fat, high sodium treat. We eat it once or twice a season, and make sure we're eating lightly and drinking Lots! of water the same day. This won't fill you up physically, but the flavors are pretty special. I add some procuitto and three or four anchovy fillets, (not added into the nutritional info) but be sure to find the ones without added salt or you won't even taste the anchovy flavor.
Speaking of salt, if you need to watch your salt, Don't! eat this at all; the ingredients are almost all processed and loaded with salt.

1/2 oz pepperoni, or three deli slices
1 tbsp pecorino romano cheese, grated
1 oz mozzarella cheese, whole milk, cut into very thin 2-3 inch sticks
5 oz romaine lettuce, laid flat on plate (may be torn/cut)
    1 1/2 roasted red peppers, about 3 1/4 oz or 48g
3/4 oz sweet onion, 1/2 of a slice about 1/4" thick
5-8 grape tomatoes, 2 oz weighed
2 pepperoncinis, garlic or plain, about 12g weighed
    4 black pearl large olives
4 green olives, Queen (large) size, w/pimento
    5-6 italian fat-free croutons, about 7g weighed
1 1/2 tbsp Good Seasons Zesty Italian salad dressing

Directions

Lay the lettuce flat on a plate, or tear it into short pieces and fill the plate surface.
Roll the proscuitto (if you add it), pepperoni, and salami, and place around the edge of the plate.
Slice the mozzarella into 1/4" sticks, place them in a spiral around the plate.
Slice the roasted red peppers into strips and place around plate; add olives, grape tomatoes, croutons, and separate the onion slice rings and sprinkle the onion pieces and the pecorino romano grated cheese over the top.
If you choose, place the anchovy fillets on top (not added into nutrition info).
Mix/shake the salad dressing just before you add it on top.
