Ingredients

    3/4 cup whole wheat pastry flour
    1/4 cup coconut flour
    1/4 cup milled flaxseed
    1/8 cup almond meal
    1/8 cup quinoa flour
    1/2 cup brown sugar
    2 1/2 tbsp powdered lowfat buttermilk
    1 1/2 tsp baking soda
    cinnamon, cardamom, cloves and other spices to taste
    2/3 cup of egg whites
    1/2 cup olive oil
    2/3 cup skim milk
    2 tsp Tahitian vanilla
    1/8 cup honey
    1/8 cup blackstrap molasses
    1 medium apple
    1 medium pear.

Directions

Preheat oven to 360. Prepare a muffin tin. Cut the pear and apple into very small pieces. Set aside. In a bowl, assemble all the dry ingredients. In a separate bowl assemble the liquid ingredients and mix well. Then, pour liquid ingredients into the dry and mix well. Add the cut up fruits and pour into muffin compartments. Bake for about 25 min.
