Introduction

This never fails to fool people into eating some healthy veggies! This never fails to fool people into eating some healthy veggies!
Number of Servings: 5

Ingredients

    3 cups of Cauliflower, grated
    1 lbs of extra lean ground beef, browned
    1/2 cup of Salsa
    Taco seasoning to taste (2 tsps or so)
    Black Pepper to taste
    Crushed garlic to taste

Directions

Process the cauliflower through a food processor using the grating attachment. Brown the meat, add taco seasoning, pepper and garlic to taste and the salsa, and then add the grated cauliflower. Cook over medium heat until the cauliflower is just becoming tender but still has some bite. Do not overcook. Serve with cheddar cheese or sour cream if desired. Try folding 1/2 cup of the mixture in a whole lettuce leaf as a wrap.
