Rotini with Garlic Cheese sauceSubmitted by: GVMEMOMENT
1.5 cups Low Fat Ricotta Cheese
.75 cup Shredded Part Skim Mozzarella cheese
1/8 cup Reduced Fat Parmesan Cheese (grated)
8oz uncooked Whole Wheat Pasta
4t Olive Oil
6 cloves Garlic-I use frozen, but crushed fresh would work
4t Basil--I use the frozen Basil, but dried could work too
Salt and pepper to taste
Meanwhile, mix cheeses in a small bowl.
Heat oil in a non-stick pan and sautee garlic and basil until melted if using frozen, or until garlic is heated through if using fresh. Add salt and pepper to taste. Add pasta to garlic and toss until evenly coated. Add cheeses and combine over low heat until cheese are melted and heated through. Serve immediately.
