    3 0Z BUTTERBALL CAJUN TURKEY SHREDDED
    3/4 C KRAFT 2% CHEDDAR CHEESE SHREDDED
    3/4 C ONION DICED
    1/4 C BELL PEPPER DICED
    1 1/2 C FRESH SPINICH CHOPPED
    6 T CILANTO CHOPPED
    2 T LIGHT OLIVE OIL
    PAM OLIVE OIL COOKING SPRAY
    6 WHOLE WHEAT TORTILLAS

MAKES 6 SERVINGS

CHOP ONIONS, BELL PEPPER, SPININCH, CILANTRO AND TURKEY.SET ASIDE IN SEPERATE CONTAINERS. IN A MEDIUM SIZED BOWL BEAT EGGS UNTIL FROTHY THEN ADD SALT AND PEPPER, STIR WELL. SPRAY A 12" SKILLET WITH PAM OLIVE OIL COOKING SPRAY, ADD 2 T LIGHT OLIVE OIL, HEAT ON HIGH HEAT UNTIL HOT. ADD ONIONS AND BELL PEPPER SAUTE UNTIL SOFT, REDUCE HEAT TO MEDIUM AND ADD SPINICH, SAUTE UNTIL WILTED, ADD TURKEY SAUTE UNTIL WARM, ADD EGGS, COOK STIRRING GENTLY UNTIL EGGS ARE DONE. HEAT TORTILLAS IN MICROWAVE FOR 20 TO 30 SECONDS. TOP WITH 1/2 OZ. OF CHEESE, ADD 1/6TH OF EGG MIXTURE AND TOP WITH 1T CILANTRO. ROLL AND ENJOY! WHEN COOKING FOR 1, WRAP EACH BURRITO IN FOIL AND STORE IN A LARGE FREEZER BAG FOR A QUICK BREAKFAST OR LUNCH.
