Introduction

This is adapted from a Kraft Foods recipe. I added more veggies and less dressing. You can put whatever veggies you like in, I just put my faves in this recipe. Number of Servings: 4

Ingredients

    2 chicken breasts, boneless, skinless
    4 tsp soy sauce
    4 tsp Catalina dressing
    1/4 cup Catalina dressing (added later)
    1 cup carrots
    1 cup cauliflower
    1 cup broccoli
    1/2 bell pepper
    2 cups uncooked Minute Brown Rice (4 cups prepared)

Directions

1. Slice chicken breasts and stir-fry in 4 tsp soya sauce and 4 tsp Catalina dressing. (I often use chicken that I cooked earlier and just warm it up with the soya sauce and Catalina dressing)
2. Add in veggies and stir-fry until they are cooked to your liking (I don't like them too crunchy; sometimes I add a bit of water to cook them a little faster)
3. Stir in 1/4 cup Catalina dressing.
4. Serve over rice.
