Simple to make, you can make this meal the night before, so when you get home from work or a day of shopping, pop into pre-heated oven for 1 hour and dinner is served Simple to make, you can make this meal the night before, so when you get home from work or a day of shopping, pop into pre-heated oven for 1 hour and dinner is served
Number of Servings: 8

Ingredients

    1lb ground Turkey
    2 cups tomato sauce and hot enchilada sauce combined
    1- 15 oz. can pinto beans drained
    3 cups grated fat free cheddar cheese
    1/4 c sliced black olives
    1/4 c green onions
    12 corn tortillas

Directions

brown turkey, add tomato sauce, enchilada sauce, beans, Coat bottom with meat sauce, layer tortillas, meat sauce, cheese, repeat layers, top ending with cheese , olives, green onions .
Bake at 350
for 1 hour

Serve with low fat sour cream and salsa
