Beef Barley Soup from WW boards

Introduction

Beef barley soup reminiscent of my mother's soup! Beef barley soup reminiscent of my mother's soup!
Number of Servings: 12

Ingredients

    2 cups uncooked barley
    1 pound stew meat, diced and cut all visible fat away
    1 cup low sodium chicken broth
    4 or more cups tap water
    2 tsp chili powder
    1 tsp garlic powder
    1 package diced fresh mushrooms
    2 cups yellow frozen corn kernals
    1 can Del Monte diced no salt added tomatoes
    2 cups sliced fresh carrots
    2 cups sliced fresh celery
    1 diced onion
    3 cloves garlic, pressed
    1T canola oil to brown meat in
    4-5 bay leaves, fresh

Directions

Brown meat first in pan with canola oil, then place into your soup pan. Cook onion, garlic, celery, carrots, garlic in pan until softened up, add to meat with broth and water. Add mushrooms, barley, and corn. Allow to simmer with bay leaves until ready to eat, barley will expand, so check fluid levels frequently
