Chicken Jalfrezi

Introduction

This is a Pakistani recipe that is a spicy curry. This dish is best served with basmati rice, chapattis or naan bread I have modified the original recipe to remove the ghee, added many more onions (love onions!). The onions were supposed to be grated. I slice or dice them to make it easier. This is a Pakistani recipe that is a spicy curry. Ingredients

    2 T oil
    6 Cups sliced Onions
    2 t salt
    1 tsp minced garlic
    2 T tumeric
    2 t chili powder
    1 pound skinless boneless chicken thigh, cubed
    1 pound skinless boneless chicken breast, cubed
    3 cans (14.5 each) diced tomatoes
    2 T cumin
    2 T ground coriander
    2 T grated ginger

Directions

Heat oil in large pan. Add onions and salt. Cook until onions are wilted and just start to brown. Approximately 30 mins. Add turmeric, chili powder and chicken. Cook 5 minutes. Add tomatoes, cumin, coriander and ginger. simmer 10 mins. serve over rice.
