Crockpot chicken tostadas

Number of Servings: 10

Ingredients

    2 pounds boneless skinless chicken thighs
    1 medium onion, sliced thin
    2 Tbsp chili powder
    3 Tbsp lime juice
    8 garlic cloves, minced
    1/4 tsp hot pepper sauce
    10 tostada shells
    2 C fat free refried beans
    2 C shredded lettuce
    1 tomato chopped

Directions

In a slow cooker, place chicken onion, chili powder, lime, garlic and pepper sauce. cover and cook on low for 5-6 hours or on high for 2-3 1/2 hours.

Using a slotted spoon, remove chicken and onion from cooker. Reserve 1/2 cup of the cooking liquid; discard the rest of the liquid. Using two forks, shred the chicken and then combine in a bowl with liquid and onion.

Spread beans on a tostada shell and top with chicken, lettuce, and tomatoes.

1 tostada = serving
