Ingredients

    While cooking whole wheat noodles to al dente, mince 1 clove of garlic and the ginger. In a small bowl, whisk together peanut butter, canola oil, peanut (or sesame) oil, cider (or rice) vinegar.
    When pasta is cooked, drain and rinse it and then add it to the peanut butter, oil, and vinegar mixture, mixing well.
    Place vegetables on top, toss and serve.

Makes 6 1 cup servings
