Artichoke Fritatta

Ingredients

    1 can artichoke hearts, drained
    1c ff. egg substitute
    2 potatoes, chopped
    1 tbsp olive oil
    2 tbsp parmesan cheese
    3 cloves garlic

Directions

Cook chopped potatoes in 1tbsp olive oil. When they are golden, add the artichoke hearts and garlic. Stir and let cook a few minutes. Pour in the egg, salt and pepper. Cover and let cook until set. Sprinkle Parmesan cheese on top and place under the broiler until golden brown.
