Gluten free Beer bread

Introduction

This recipe is from recipezaar.com and is delicious! I changed it a bit to add more fiber in my life and instead of 2/3 tapioca flour I did half in flax seed meal. Great texture and moist bread. Ingredients

    1 large egg
    1 tsp salt
    1 cup brown rice flour
    1/3 cup tapioca flour
    1/3 cup corn flour (corn starch)
    1/3 cup flax seed meal
    1 T xanthan gum or guar gum
    1T &1 t baking powder
    1t baking soda
    3 T brown sugar
    1 t dill weed
    1 12oz gluten free beer (I used redbridge)

Directions

Preheat oven to 350. Scramble egg with the salt in a small bowl set aside. Combine all dry ingredients in a medium sized bowl, mix well with a fork. Add egg mixture and 1/2 of beer mix well, stir in remaining beer mix until well combined. Put mix into well greased loaf pan. Bake for 45 minutes. Remove from oven and cool for 10 minutes on a wire rack. Enjoy!
