GF Apricot Oat Bars

Ingredients

FILLING
2/3 cup reduced or no sugar apricot preserves (I used ED Smith Peach, Mango Orange preserves)
4 dried apricots, finely chopped
CRUST & TOPPING
1/4 cup sweet rice flour
1/4 cup tapioca flour
1/4 cup sorghum flour
1/4 cup almond meal
1 tsp xantham gum
1/3 cup STEVIVA BLEND + 1 tbsp molasses (or 1/2 cup dark brown sugar)
1/2 tsp ground cinnamon
1/4 tsp sea salt
1/2 tsp baking soda
1 cup GF oats
1/2 cup chopped walnuts
1/2 cup melted butter
1 egg
1 tsp vanilla extract
Directions
Preheat oven to 350 degrees.
Line a square baking pan with parchment and oil slightly.
Combine filling ingredients in a small bowl. Set aside.
Combine crust & filling ingredients in a medium sized bowl. Take half and press into baking pan. Spread with filling mixture. Use remaining topping mixture and try to sprinkle evenly over filling. The topping isn't really crumbly; it will be slightly sticky, so just spread as evenly as you can. Press it down ever so gently.
Bake for approx 30 minutes.
Allow to cool completely before cutting into squares. At least 1 hour.
