Chicken Enchilasagna

Ingredients

    6 flour tortillas
    3 chicken thighs, bone and skin removed (abt 10 oz)
    1 can cream of chicken (or mushroom) soup
    1 small can (4 oz) diced green chiles
    1/2 cup low fat sour cream
    1 cup shredded cheddar cheese

Directions

Cook chicken, then chop into small pieces. In a bowl, combine chicken with soup, chiles, and sour cream. Layer tortillas and chicken mixture in a 7x11 casserole dish (I used a glass pan and it didn't need to be greased), then sprinkle cheese on the top. Bake at 350 until the cheese is melted and bubbly (about 30 minutes).

Makes 8 (appx 2.5 x 4 inch) servings
