Apple Spice Muffins (Whole wheat)

Introduction

Number of Servings: 16

Ingredients

    *Whole Wheat Flour, 2 cup
    Wheat bran, crude, 0.5 cup
    Brown Sugar, 1 cup, unpacked
    Baking Powder, 1.5 tsp
    Baking Soda, 1 tsp
    Salt, 1 tsp
    Egg, fresh, 2 large
    Buttermilk, lowfat, 0.5 cup
    Applesauce, unsweetened, 1.25 cup
    Canola Oil, 0.2 cup
    Apples, fresh, 2 cup, chopped
    Vanilla extract, imitation, alcohol, 1 tsp
    Flax Seed Meal (ground flax), 2 tbsp

Directions

Preheat oven to 375 degrees.
In large bowl, combine fours, wheat bran, sugar, baking soda, baking powder, and flaxseed - whisk until uniformly mixed.
In seperate bowl, combine milk, apple sauce, oil, egg and vanilla. Whisk until evenly mixed and pour over dry ingredients. Add chopped apples.
Stir until dry ingredients are just mixed in. Spoon into greased or line muffin cups and bake in 375 degree oven for 20-22 minutes. Muffins are done when a toothpick stuck into the middle of a muffin comes back out clean. Allow to cool before serving.
