Easy Pasta Salad

Ingredients

    *2 cups whole wheat penne pasta
    *4 oz cooked shrimp
    *3/4 cup chopped cucumber
    *1 cup cherry tomatoes
    *1 cup frozen broccoli
    *4 tbsp fat-free balsalmic vinagrette
    *1/4 cup feta cheese

Directions

Serving size: 1 cup; Makes 5 servings
-Bring salted water to a boil in a large pot
-Add 2 cups of whole wheat penne pasta
-While pasta is cooking, chop 3/4 cup cucumber and halve 1 cup cherry tomatoes
-In large bowl combine cucumbers, tomatoes, and feta cheese
-When pasta is about 2 minutes from being done, add shrimp and frozen broccoli to pot; finish cooking pasta
-Drain pasta, shrimp, and broccoli mixture. Run under cool water to chill
-Combine all contents in large bowl; Pour on 4 tbsp balsalmic vinagrette; toss
