2/3 c all purpose flour
1/3 c whole wheat flour
2 T sugar
2 tsp baking powder
1/2 tsp salt
1/4 c liquid egg whites
3/4 c almond milk
1/4 tsp almond extract
Mix-ins of your choice
Directions
•Whisk flours, sugar, baking powder, and salt together in a bowl.
•In a separate bowl, whisk egg whites, one half of the almond milk, and almond extract.
•In a small sauce pan, melt margarine over low heat along with the remaining milk. When melted, stir into the egg mixture bowl.
•Pour wet ingredients into dry ingredients and wish until batter forms.
◦Tip: Your batter should be slightly lumpy. If your batter gets too smooth, your pancakes will get very dense.
•Heat a griddle or skillet over medium low heat. Pour batter onto skillet.
◦Tip: Use 1/4 c measuring cup for small pancakes and 1/3 c measuring cup for larger pancakes.
•Cook about one minute, and sprinkle 2-3 teaspoons of mix-ins onto pancake.
•Continue to cook until bubbles form, about another minute, and gently flip.
•Cook until cooked through, about 2 additional minutes.
•Continue with remaining batter until all pancakes are completed and enjoy!
