Homemade Chicken Soup

Introduction

This soup is excellent with noodles (as my children prefer) or my Red Mexican Rice (as my husband prefers). This soup is excellent with noodles (as my children prefer) or my Red Mexican Rice (as my husband prefers).
Number of Servings: 8

Ingredients

    8 chicken legs
    1 onion, chopped
    5 stalks celery, cut in half lengthwise, then chopped
    8 oz baby carrots, sliced
    2-3 sprigs fresh thyme
    2 T tomato boullion with chicken
    salt to taste
    3 cloves garlic, minced
    6 qts water

Directions

Cook chicken, bones and all in 6 qts water with boullion on med-high heat for 60 minutes or until cooked through. Remove chicken and cool. Add chopped vegetables, garlic and thyme to broth. Cook until tender 5-10 minutes. Remove chicken from bones. Add to soup. Cook on low heat to meld flavors 10 minutes or more. Makes 8 1 1/2-C servings
