Ingredients

    Smallest head of cabbage you can find (3-4" diameter)- sliced into thin strips/shredded
    4 small to medium yukon gold potatoes
    1 cup matchstick/julienned carrots
    1 green bell pepper, cut into short strips
    1lb beef cut into short strips (used top sirloin)
    1/2 medium onion, chopped
    2 minced cloves of garlic
    1 Tbsp Canola Oil

    Water

    salt and pepper to taste (not tracked)

Directions

Cut onion into small dice, mince garlic.

Carrots should be julienne/matchstick cut - or get precut.

Bell Pepper into short strips, potatoes into little strip pieces, and meat into little strip pieces. Cabbage into long thin strips or shredded style.

Start oil - when it is hot (piece of onion sizzles immediately) add onion, garlic, peppers - cook 1-2 minutes and then add meat. When meat is getting closer to done, add cabbage and carrots. When this is all mixed through, add enough water that you can see the level but the food is not covered - should be a little more than halfway up the depth of your food.

When that starts going, cover pot and simmer.

Stir occasionally and continue to cook until water cooks almost all away, potatoes are very tender.

Season w/ salt and pepper. May be served with rice, not included in this nutritional analysis. Also sometimes eaten w/ kimchi added.
