Introduction

Ingredients

    Ingredients
    1 tablespoon vegetable oil
    1/2 onion, chopped
    1/2 green bell pepper, chopped
    1/2 yellow bell pepper, chopped
    1 (14.5 ounce) can chicken broth or vegetable broth
    1/2 (10 ounce) can diced tomatoes with green chile peppers
    1 (15 ounce) can black beans, drained
    1/2 (15 ounce) can pinto beans, drained
    1 (15 ounce) can kidney beans, drained
    2 carrots, diced
    5 mushrooms, sliced

Directions

In a large saucepan over medium heat, cook onion,carrots, mushrooms, green and yellow bell peppers in oil until softened. Stir in chicken or vegetable broth, tomatoes, black beans, pinto beans and kidney beans. Heat through.
