Zucchini & Brown Rice stir fry

Introduction

This is adapted from my clean eating magazine. I make a batch up and I have 4 lunches for the week and it is filling and yum-o! This is adapted from my clean eating magazine. I make a batch up and I have 4 lunches for the week and it is filling and yum-o!
Number of Servings: 4

Ingredients

    1 medium onion
    1 Tbsp. olive oil
    3 baby zucchini - cut in 1/2 & quartered
    2 yellow squash - cut in 1/2 & quartered
    1 bag Trader Joe's pre-cooked brown rice
    3/4 C. Trader Joe's lite shredded mozarella
    Salt & Pepper
    1 tsp. dried basis
    2 Tbsp. minced garlic
    1 tsp. dried rosemary

Directions

Saute onion in olive oil. When onion is soft, add the zucchini and squash. Cook until zucchini and squash are tender. Add garlic and season with salt & pepper and spices. Add brown rice and stir to combine. Sprinkle cheese on top and put a lid on it for about 3-4 minutes, until cheese is just melted. Enjoy!!

Makes 4 servings.
