Mary's Italian Meatloaf

Introduction

This is a combination of ingrediets i use wtih meatloaf, but here I used panko crumbs instead of the oatmeal I usually use. I serve it with grean beans and a baked potato for a homemade treat. Number of Servings: 4

Ingredients

    1 lb. lean ground beef
    1/2 cup chopped portabello mushrooms
    1/2 cup liquid egg substitute
    1/2 cup Japanese bread crumbs (panko)
    1/2 tsp. each salt and black pepper
    1 tsp, granulated garlic (or one large clove, chopped fine)
    1 tbsp. fennel seeds
    1 tsp. Italian seasoning
    1 tsp. dried basil

Directions

Place eggbeaters in a bowl. Crumble ground beef over egg/milk mixture. Add crumbs and all of the seasonings. Mix gently with your hands, being careful not to overmix. Form into a loaf and place in a pan. Bake at 350 degrees for one hour.
Makes four servings.
You can adjust seasonings to fit your family's taste, and add chopped onion, carrots, or bell pepper, but be sure to adjust to nutritional information.
