Yellow Squash Casserole

Introduction

Everyone in my family REALLY doesn't like squash, but we eat this recipe! Everyone in my family REALLY doesn't like squash, but we eat this recipe!
Number of Servings: 10

Ingredients

    3c. cooked squash
    2 eggs
    1c. evaporated milk, nonfat
    1c. grated cheese
    2c. cracker crumbs (Ritz or Saltines)
    3/4 stick margarine
    1 tsp. salt
    1/2 tsp. pepper
    1c. chopped onion
    (opt) squirt of hot sauce
    For lower fat options try the following substitutes:
    1/2c. Egg Beaters for 2 eggs
    Low-fat butter for margarine
    Low-fat crackers
    Fat free or low-fat cheese for mozarella


Directions

Combine butter, milk, salt, pepper and onion with squash. Add egg, cheese and crumbs. Pour into greased casserole dish. Bake at 375 for 40 minutes or until casserole is brown on top. Try any other vegetable in place of the squash.
