Ingredients

    1# Camellia Red Kidney Beans
    1 Med. Onion, chopped
    4 Garlic cloves, raw
    7 - 8 oz Ham, smoked or cured, cooked
    2 Bay leaves
    Pepper, black
    2 Tbs Tony Chachere's Original Creole Seasoning


Directions

1. Rinse & soak red beans overnight. In morning, drain & add fresh water to crock pot, appx 1" over beans.

2. Add all other ingredients & stir.

3. Cook on high for 6-8 hrs. or until cooked throughly, making sure to keep water level a little above beans. (Beans should be tender.)

4. Once tender, use a large spoon to scoop up some of the beans & mash with fork. Do this for appx. 1/4 of the beans, then stir. This should thicken your beans.

Serve over rice & enjoy.
