Chicken Enchiladas with Corn Tortillas

Introduction

This was my second attempt at chicken enchildas, hubby liked them better this way! This was my second attempt at chicken enchildas, hubby liked them better this way!
Number of Servings: 4

Ingredients

    8 corn tortillas
    5 oz cooked chicken -white meat
    1 onion chopped
    1 tbs olive oil
    1 can Old el Paso Enchilada sauce
    1 oz cheddar
    1 oz mozz
    Penzeys spices

Directions

Chop onions & sautee in olive oil, add diced chicken,stir in spices.

heat tortillas in microwave,
& wrap filling lace seam side down in a bit of enchilada sauce, when all the tortillas are in n, pour the rest of the sauce on them.
Sprinkle with shredded cheese.

Cover with foil & bake 375 for 20 minutes, serve with blck bean & bell pepper salad!
