Introduction

This is a meal in itself and is best served under pinto beans! It's wonderful for a vegetarian dinner. This is a meal in itself and is best served under pinto beans! It's wonderful for a vegetarian dinner.
Number of Servings: 12

Ingredients

    1 box corn bread mix
    1/3 c milk
    1 egg
    1/2 c creamed corn
    1/4 c pimentos, diced
    1/4 c jalapenos, chopped
    1/3 c shredded Mexican cheese blend
    1 T sugar

Directions

Preheat oven at 400

Mix all ingredients in bowl. Let rest 5 minutes.

Grease muffin pans, fill each muffin slot half way.

Bake 20-30 minutes.

Makes 12 muffins. Serve warm or cold.
