Carrot Cookies

Introduction

With whole wheat flour and applesauce for half of the oil, these are so yummy and relatively guilt-free! With whole wheat flour and applesauce for half of the oil, these are so yummy and relatively guilt-free!
Number of Servings: 44

Ingredients

    1/2 c Butter
    1/2 c Applesauce
    3/4 c White Sugar
    1 tsp Lemon Juice
    1 Egg
    1 tsp Vanilla Extract
    1 c Carrots
    1 tsp Salt
    2 tsp Baking Powder
    1 c White Flour
    1 c Whole Wheat Flour

Directions

Add Ingredients in order: cream butter and sugar, add egg lemon and vanilla, Mix in carrots salt and baking soda, then add flour.

I use a small ice cream scooper to divide dough. Makes about 3 dozen, plus approx. three more. Bake at 375 for about 12 minutes.
