No-meat chili

Introduction

Nothing 'replaces' the meat - I just leave it out. I also specify no-salt added canned beans. Ingredients

    Peppers, sweet, red, raw, sliced, 2 cup
    Green Peppers (bell peppers), 2 cup, chopped
    Garlic, 4 cloves
    Extra Virgin Olive Oil, 1 tbsp

    Kuners No Salt Added Red Kidney Beans (425g can)
    Kuners No Salt Added Black Beans (425g can)
    Red Ripe Tomatoes, 1 large whole (3" dia)
    Tomato Paste, 2 can (6 oz)
    Yellow Sweet Corn, Frozen, 227 grams (1/2 of one pound bag)
    Water, tap, 2 cup (8 fl oz) (more or less to preference)

Directions

dice tomato & peppers to preferred size
Saute in 2 TBSP olive oil with minced garlic

Thoroughly rinse and drain the beans.

Dump all ingredients into stock pot
Season with chili powder and other preferred chili seasonings.
Simmer until hot through.
