Meeowww's (Madeover) Mexican Meatloaf

Introduction

Ingredients

    16oz ground turkey breast
    1 egg
    1 small bag (3oz) Quaker Guacamole Tortillaz (mashed)
    4oz sliced black olives
    1/2c (reduced fat) shredded mexican cheese
    6T salsa
    1/2c fat-free sour cream
    3 tomatoes, diced
    1T taco seasoning
    Optional seasonings (cumin, chili powder, paprika)

Directions

Combine all ingredients (except cheese) and dump into a Pam-greased loaf pan. Bake (covered in foil) approx 40 minutes. Remove from oven, remove foil. Sprinkle cheese and paprika (optional) on top, then broil for about 5 minutes. Makes 5 large servings.

  • Wow.. what a huge difference in sodium levels by using the fresh tom's vs canned. I would just have to switch the Tortillaz w/ corn based ones vs flour to make it GF and be good to go! - 1/13/11
