1 slice whole grain bread, broken into small pieces
1/2 cup milk, scalded
1 egg, separated
1 can salmon (I use Cloverleaf Sockeye (Wild Red Pacific)
1/2 tsp lemon juice
Preheat oven to 360 degrees.
Soak bread pieces in scalded milk.
Separate the egg. Beat the white until stiff peaks form.
Mix salmon, egg yolk and lemon juice with the bread/milk mixture.
Fold in egg whites using spatula. Put into loaf pan (which has been prepared with spritzed olive oil).
Bake at 360 for 30 minutes. Makes 2-4 servings. (Note: nutritional information was calculated using 4 servings).
