Banana Bread - No fat

Ingredients

1 3/4 c flour
2/3 c sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 c mashed banana (2 to 3 medium bananas)
1/3 c unsweetened applesauce
2 tbl milk
2 eggs
Directions
In large mixer bowl combine 1 cup of the flour, sugar, baking powder, baking soda & salt. Add mashed banana, applesauce & milk. Beat with electric mixer on low till blended, then on high speed 2 minutes. Add eggs & remaining flour, beat till blended.
Pour batter into a greased 8 X 4 X 2 loaf pan. Bake at 350 for 55 to 60 minutes or until center comes out clean. Cook for 10 minutes on wire rack. Remove from pan & cool completely on wire rack. Wrap & store overnight before slicing. Makes 16 servings.
